Slow Cooker Barley Vegetable Soup

Low fat goodness that's sure to fill you up!

Perhaps my lack of vegetable consumption over the past few weeks had finally caught up with me – because this weekend I had homemade vegetable soup on the brain.  In an attempt to silence the voices, I found this recipe online and gave it a shot. I’m no cook by any means, so the ingredients had to be super easy for me to find at my local grocery store.  Check.  And the prep work needed to be quick. Check (only 20 minutes!).  And, most importantly, it had to include vegetables I actually liked.  Check!  I tweaked the original recipe by adding a tablespoon of hot sauce  – but for those of you who don’t like spicy food please note that it tasted great without it.  I was especially happy with how thick the final product became (I swear I was stuffed after just half a bowl!).  Let your slow cooker do a little of the work for you this summer all the while adding some lovely vegetables to your diet – you won’t be disappointed.

Ingredients:

  • 1 cup medium pearl barley
  • 1 bay leaf
  • 1/2 tsp. fennel seed
  • 9-oz. pkg. baby carrots
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 3 garlic cloves, minced
  • 2 sweet potatoes, peeled and chopped
  • 2 cups frozen corn
  • 2 cups frozen green beans
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 3 (14 oz). cans vegetable broth
  • 4 cups water
  • 14-oz. can diced tomatoes with herbs, undrained
  • 3/4 tblsp. Tabasco Pepper Sauce

Preparation:

Place all ingredients except tomatoes and hot pepper sauce in a 5-6 quart crockpot in the order given. Do not stir. Cover crockpot and cook on low for 6-8 hours. Stir soup and add tomatoes and hot sauce. Cover crockpot and cook for 10-15 minutes longer until soup is hot. Remove bay leaf before serving.  Makes 10 servings.  Source: About.com Busy Cooks  ~ LM
